A handy gadget and a cookie recipe make over...

Ben and I drink gallons of hot tea over the Fall and Winter months. We looked at his gas bills from Fall and Winter time period last year and for sure noticed a price difference not huge but enough that we decided to see if a electric kettle would save a few bucks a month. So I did a little nerd research and it does considerably use less energy with a electric kettle. Then I proceeded to do some quick research and found a good quality kettle for under $30.00 by Hamilton Beach and GE has one exactly like it as well. Ben and I went to pick it up and stock up on Halloween candy for our Trick-Or-Treaters. We get a lot of kids so we spent about $30.00 on candy! Now this is dangerous for us because this huge bowl of candy sat around the house until Monday night. Man did the house smell sweet from the candy. When I walked down the stairs I smelled it wafting through the air. I know, scary especially for two people that LOVE sweets!!!

Well, I decided to try to keep Ben's and my paws off the candy and make protein packed cookies to have instead of the candy. I figure Ben is much more attracted to home made baked goods then corn syrup filled candy. Also these cookies are great with a cup of tea. Sweet but not too sweet and are packed with healthy protein.

1/2 cup of almond butter
1/2 cup of coconut flour (or oat, brown rice, qunioa flour)
1/3 cup of raw honey
1 tsp of vanilla extract
2 tbsp of almond milk
1/2 tsp of cinnamon
1/4 tsp of nutmeg
2 egg whites (or two flax seed vegan eggs, twp heaping tablespoons of flax seed meal mixed with four tablespoons of water and let thicken)
4 heaping tablespoons of no sugar added or low sugar strawberry jam/preserves (or other fruit preserve like apricot or raspberry)
1 tsp of lemon juice
optional crushed almonds or almond meal

1. Set oven to 350 degrees

2. Add everything except the fruit preserves into a stand mixer, food processor and mix until the mixture is combined and doughy.

3. Next roll into small balls and then press with palms and lay on a parchment paper lined cookie sheet.

4. Then either with your thumb or a spoon press the centers and remember to pinch the edges if they come apart. This is where you can add the almond meal or crushed walnuts. You can just roll the in a bowl to give them a dusty of more nut protein.

5. Combine your fruit preserves in a bowl with lemon juice and stir until smooth.

6. Spoon about a teaspoon or more into each cookie

7. Place in oven for 15 to 18 minutes. The cookies will still be soft to the touch when done. Let cool on a cooling wrack and enjoy!

As for the kettle. We have been using it about two or three times a day and it is great! Easy to clean and the kettle it self has no cord which is great for carrying around the kitchen. Best $30.00 dollars spent in a while for sure.

Vera Bradley's Yum Yum Cake Gluten Free

So I purchased Vera Bradley's cook book in July and love reading the recipes. They take me back to my Mid-Western roots with every flip of a page. I saw this great cake recipe that could be easily transformed into a Gluten free cake.

Monkey Munch- Wheat Free

O MY GOD!!!!!!!!!!!!!!!!!!!!!!
This stuff just ROCKS!!!!!!
I saw this big bag of sugar dusted cereal stuff on Jon and Kate Plus 8. I looked at the TV and said out loud "what is that?" My Mother in true form said "that's Monkey Munch, Kate makes it all the time for the kids". So I walked down stairs and did a search for it and found a few recipes. All pretty much the same but of course my Mom requested a twist to it when I decided I would give it a try. So I cut the recipe in half and used Puffins Wheat Free cereal instead of chex mix. If you don't have a problem with wheat like I do I would use the Puffins cereal regardless because it has a lot of fiber and by using it makes the snack quite healthy. Chex cereal is just empty calories made with over processed rice flour.

What you will need:
One smallish Pyrex dish with cover
One large mixing bowl
spatula
wax paper
Air tight storage container
5 cups of Puffins cereal
3/4 cup of semi-sweet chocolate chips
1/4 cup of peanut butter + one tbsp or two depending on how Peanut butterier you want it to taste
1 tbsp of butter
1 cup of powdered sugar
1/2 cup of peanuts
splash of vanilla

Roll out about 2 1/2 feet of wax paper and lay on the counter. Measure out your cereal and put in large mixing bowl and put aside. Take your Pyrex dish and combine the Chocolate Chips, Peanut butter and butter. Place the dish in the microwave covered for 1 minute on high power. Take Pyrex out of microwave and stir together as mush as possible. Cover dish again and put back in microwave for about 30 more seconds. Take out Pyrex and stir until mixed and smooth. Add the splash of vanilla. This should just take a couple of good stirs and it is ready. Take your Pyrex dish and the spatula and pour the mixture of the bowl of cereal. Make sure to get every bit of the mixture. Then toss the cereal in the mixture until completely coated. Add your 1/2 cup of Peanuts and toss again. Take the 1 cup of powdered sugar and sprinkle over coated cereal in the bowl. Toss again until coated. Take the coated cereal and pour on the wax paper. Let sit out for about an hour or two and then pick up the wax paper and pour into the air tight container.

Everybody loves this stuff. My boyfriend went crazy over it. I think it would make a great after dinner desert for little kids because it is sweet, but has protein fiber and you made it so it has no crazy ingredients. It is a great pick me up snack at work. I have a huge sweet tooth so this is a great sweet treat without a lot of guilt and no wheat!!!!!!!!!
Enjoy,
Shara
